the bar is the highest margin thing you sell and the easiest place to lose money without anyone stealing anything. over-pour, a dirty line, a list nobody reads, an offer that sounded generous in the office. this is 10 Claude and Codex skills for the drinks side, built on the actual measures law rather than what the last manager said.

the three-liquid rule is the most misunderstood thing behind a bar, and it is one sentence. article 3(2) of the 1988 specified quantities order frees a spirit from the fixed measure only when it forms a constituent of a mixture of three or more liquids. so a gin and tonic is legally tied to 25ml or 35ml and multiples of them. a Negroni is not. that single line decides how you write every cocktail spec you own.

there is a live trap in the licensing conditions. legislation.gov.uk's page for the 2010 mandatory conditions order still displays the superseded schedule and flags the substitution as a change not yet applied. anyone reading the 2010 order on its own is reading conditions that stopped applying on 1 October 2014. the wording moved from "free tap water" to "free potable water" and the smaller-measures duty gained a separate printed-display limb. the pack is built on the current text.

and the wine duty easement ended on 31 January 2025, so wine is taxed on its real strength now. that is why the same bottle at 14.5% carries meaningfully more duty than one at 11%, and why a list written before last year is quietly costing you on every strong red.
